Born out of our love of nature, Smith Family Maple Syrup has grown from a hobby to a small local business set on eight acres of land in Merrimac, MA. Our Maple Syrup can be found at local farm stands and will soon be available for purchase thru this site.
The Maple season preparation begins just after the leaves fall off the trees. We inspect each Maple tree and mark how many taps will be placed in each one in early spring. Our process is semi-automated with collection lines and barrels throughout our small forest of trees. In 2015 we began use of a vacuum system in which the sap is pulled through the lines to a collection point where it is then pumped up to storage tanks by our wood-fired evaporator. Once the sap is boiled down to syrup, it is filtered, hand bottled, graded and labeled.
